Below is a recipe for my favorite summer meal. I love to grill and came up with this combo for my mother's b-day a few years ago.
Appetizer: Bacon-wrapped shrimp
Take pieces of jumbo shrimp, wrap in raw bacon and place them on a large piece of aluminum. Put the aluminum on the grill, and cook until the bacon is crispy. Watch carefully as the bacon grease may catch on fire.
Salad: Lemon Dressed Salad, this is a very light but flavorful salad. The lemon juice mixes in with the fruits and veggies, so there is no need for dressing. It is very refreshing.
You will need: lettuce ( I like to use the field greens), spinach, 1 lemon, raspberries, almonds, apples, grapes, grape tomatoes, and whatever other "water based" veggies you want (such as cucumbers)
Take the lettuce and spinach and mix in a large salad bowl. Cut lemon in half and squeeze one half over the lettuce/spinach. Cover with plastic wrap and put in fridge for an hour. After an hour, take it out, put in half of the amount of raspberries. Cut the apple in half and cut one half in small chunks. Mix the apple chunks, raspberries, almonds, grapes, and grape tomatoes into the salad. Take the leftover lemon and squeeze it over the salad. Let sit in fridge for a half hour. Remove and top with slices of apples, raspberries, and almonds.
Entree: Grilled Marinated Italian and Garlic Chicken
Using boneless chicken breast, take a fork and puncture the chicken. Marinate in Italian Dressing or Italian Marinade over night. Put the chicken on the grill and cook until well cooked on both sides. When almost fully cooked, pour extra marinade over the chicken and rub on ground garlic.
Dessert: Caramelized Fruit with Yogurt sauce
You will need fruit such as peaches, pineapple, and plums. Plain or vanilla yogurt. A lime. and honey.
Cut the fruit in half and put on a warm grill (no flame). let cook until it is caramelized (soft and warm in center, clearly grilled on part that was on grill.
For the yogurt sauce: Pour yogurt into a bowl. Cut a lime in half and lightly squeeze it into the yogurt. Add a teaspoon of honey and mix. Pour over cooked fruit and serve.
